I'm Lisa Cooper, mom of 2, and I was born with a passion for baking treats. One day when I wanted to take cupcakes to school for a birthday celebration, I was not allowed... cupcakes didn't meet the standards of the school's nutritional wellness policy. And so it began. I studied, consulted, read, pored over the internet, asked teachers and nutritionists and allergy specialists... and I created recipes for cakes that not only meet my HIGH standards of deliciousness, but are also nutritionally beneficial. No one could have been more surprised to find that "healthy" treats can taste outrageously delicious.
